This recipe is another Matilda Bay favourite of Aussie Brewmakers – the Redback clone which is another wheat based popular beer.


This recipe is another great introduction to experimenting with hops, grains and wet malts for the beginner or ‘tin kit’ brewer.


Supplied Kit Ingredients:


• 1.7kg Morgan’s Special Kettled Golden Sheaf Wheat Beer Kit
• 1.5kg Morgan’s Master Malt Extra Pale ( Beer Enhancer)
• 15g Brew Cellar Premium Wheat Yeast
• 150g Cracked Wheat Grain
• 12g Hallertau Finishing Hops

Other Ingredients:


• 200g of Dextrose if kegging with no secondary fermentation (not supplied)

Method:

1. Clean / sterilize all equipment including wort, paddle, mug and jug (used for steeping)

2. Discard Morgan’s Golden Sheaf Wheat Beer tin yeast and sit tin along with the Morgan’s Master Malt Beer Enhancer tin in hot water for 10 minutes

3. Boil 1.25ltrs of water in kettle

4. Steep 12g of Hallertau Finishing Hops in 250mls of boiling water for 10 minutes

5. Steep 150g of Cracked Wheat Grain in 1ltr of boiling water for 15 minutes

6. Re-boil 2ltrs water in kettle

7. Add 1.5ltrs of boiled water to wort with Morgan’s Master Malt Beer Enhancer tin and stir to dissolve

8. Pour remaining 500mls boiling water into Morgan’s Master Malt Beer Enhancer tin and stir, then add to wort

9. Re-boil 1ltr water in kettle

10. Add Morgan’s Golden Sheaf Wheat Beer tin to wort and stir to dissolve

11. Pour 500mls boiled water into Morgan’s Golden Sheaf Wheat Beer tin and stir, then add to wort

12. Strain steeped wheat grain into wort and rinse with 500mls boiling (do not add grain to wort)

13. Add water to wort to 22.5 ltrs and test temperature – make sure it is between 18-24 degrees before pitching yeast

14. Add Hallertau Finishing Hops bag and mug of water to wort

15. Take Hydrometer reading and pitch 15g Brew Cellar Premium Wheat Yeast and stir gently

16. When fermentation finished check with hydrometer and bottle as per normal.

N.B. If kegging, add 200g of Dextrose at step 7
