Welcome to our seventh newsletter
Over Easter, we headed to Marlo to catch up with some friends, have a few beers and do a bit of fishing. Along the way we stopped at the Yarragon Ale House which is the home of Australia’s only bona fide beer hunter. It is located just off the Princes Highway in Yarragon and has more than 196 different beers on sale from Australia and around the world. Definitely worth a look if you are passing through.
 
Wine Kits
Late last year we reported on a new range of Cellar Craft “Prestige” wine kits. These kits are top of the range and include all the popular varieties:
Cabernet Sauvignon, Merlot, Pinor Noir, Chardonnay, Riesling, Sauvignon Blanc and Port.

Each kit contains all the necessary ingredients to make 30x 750ml bottles in 35 days at a cost of around $4.00 per bottle.
We have since made 3 different wines and have aged them for 3-6 months. All are absolutely fantastic and could easily compare with a 15-20 dollar bottle from the local.
The whole process is really simple and apart from the usual fermenting equipment, the only other items required are a 23 litre glass demijohn and a corking device.
  
New Chocolate Rum Liqueur
Samuel Willards has just released a new Chocolate Rum Liqueur and is very similar to Bundaberg Rum Royal Liqueur.

This 50ml bottle makes 1125ml. Simply add to Samuel Willards Liqueur Base No.3 and 710ml of 40% spirit. Alternatively, add to 220gm of sugar, 100ml of glucose and 710ml of 40% spirit.
 
New Pre-Mix Liqueurs
Samuel Willards has also released a new range of 375ml Pre-Mix Liqueurs.

Six of the most popular liqueurs are available in the range, including Chocolate Rum, Kafe, Melon, Butternut Schnapps, Sambuca and Irish Cream.
No mixing, no mess and no fuss. Just add to spirit and top up with water to make 1125ml.
 
Taste Test - Margarita Recipe
Last we month we tried something different to our normal blind taste test and made a couple of Margarita recipes. This was our winner.
Ingredients
½ lime, halved
45ml Tequila
30ml Cointreau (Triple Sec)
45ml lime juice/lime wedge
Method
Wet rim of glass with a piece of lime, then dip into salt to give a salt rim.
Fill a cocktail shaker 2/3 full of ice, then add the alcohol and lime juice, shake, then strain into the prepared glass. Serve with an extra wedge of lime. Enjoy!

Port Recipe
This Port recipe was received from a local Mansfield identity. Fortunately, we were lucky enough to share a couple of glasses. It was great and certainly a vast improvement on the original Port!
Ingredients
2.5 litres of good Port
750ml Flor or Dry Sherry
250ml Brandy
Method
Add all ingredients to a 5 litre oak case and age for 3-6 months.
 
Blended Bourbon Recipe
Don from Seymour sent us this Bourbon recipe which might be worth a try.
Ingredients
5.0 litres of Spirit @ 40%
2 pkt Still Spirits Classic American Bourbon
1 pkt Still Spirits Classic Tennessee Bourbon
3ml Samuel Willards Mature Oak
Method
Add all ingredients together and age for more than 30 seconds!
