Carboy: large glass bottle which range in size from 5-54L. Also called demijohns.

 

Body: the main part or best quality of the alcohol run off from a still.

 

Condenser: the part of the still which cools the steam and turns it back into a liquid to be collected.

 

Crown seals: the metal caps used for sealing beer bottles.

Dextrose: is a sugar derived from wheat starch and Glucose and is almost 100% fermentable. Its use is preferred to cane sugar (sucrose) which will give the beer a cidery flavour.

 

Fermentation: is the conversion of fermentable sugars to alcohol and carbon dioxide.

 

Filter carbon: a special carbon used to remove odour and flavour from spirit

Head: the low quality first part of alcohol run off from a still and must be discarded.

 

Hops: a beer ingredient which adds bitterness and/or aroma. Some of the more popular hops include:

Cascade. An all purpose bittering and aroma hop with a citrus character.

Cluster. A medium bitter hop with a pleasant aroma. Ideal for any Australian Lager, Draught or Bitter.

Fuggles & Willamette. Bittering and aroma hop traditionally used for ales and stouts.

Goldings. Bittering and aroma hop traditionally used for UK ales.

Green Bullet & Super Alpha. Excellent aroma with plenty of bitterness. Ideal for NZ style Lagers.

Hersbrucker, Hallertau & Mt Hood. Fine, spicy aroma hop from Germany and the Us (Mt Hood) used in many top Lagers.

Northern Brewer & Perle. Tradition bittering hops with a mild but pleasant aroma. Ideal for European Lagers.

Saaz. This spicy aroma hop is the essential hop for the classic pilsner. Also used in Lagers and Wheat beers.

Tettnanger. An aroma hop for Lagers and Wheat beers.

 

Pitch: the throwing or adding of yeast to the wort.

 

Priming: putting sugar into bottles to carbonate the beer.

 

Sanitise: killing excess bacteria to guard against infection.

 

Tails: the low quality last part of alcohol run off from a still and must be discarded.

 

Wash: unfermented or fermented mixture for spirit distillation.

 

Wort: unfermented beer.
